Moon Shoal and Sea Hag oysters are grown using an oyster farming technique from the 1800s called the “rack and bag” method. This growing method, along with the weather and location of the farm in Barnstable harbor where Slough Point and Scorton Creek Spring meet, influence the shape and taste of the oyster; both qualities which are extremely important to the resale value.

The unique location is one of the reasons the flavor of a Barnstable Harbor oyster differs in flavor of an oyster from Cotuit or Wellfleet, for example. The sandy bottom and infusion of fresh water in the Harbor give both Moon Shoal and Sea Hag Oysters a sweeter flavor.
